Egg Rougaille

Eggs are an excellent source of inexpensive, high quality of protein. More than half the protein contained in an egg is found in the white part along with vitamin B2 and they also containe lower amounts of fat and cholesterol than in the yolk. The whites are rich sources of selenium, vitamin D, B6, B12 and minerals, for example, zinc, iron and copper.

Ingredients

  • 1 tablespoon vegetable oil
  • 1 diced white onion
  • 2 cloves of garlic (chopped)
  • 1 teaspoon of fresh ginger
  • 1 can of chopped tomatoes
  • 4 medium sized tomatoes
  • 1 teaspoon of fresh chopped coriander
  • 4 eggs
  • salt and pepper to taste

Method

  1. Start by frying the onion in vegetable oil using a wide shallow pan until soft and golden
  2. Add garlic and ginger to the onion, stir and fry for a couple of minutes
  3. Add in a teaspoon of fresh chopped coriander, saving a small amount for garnishing
  4. Simmer with fresh tomatoes for a couple of minutes and after that add in chopped tomatoes
  5. Leave to simmer for 5 minutes
  6. Add salt and pepper or chilli to taste
  7. Crack in the eggs (you can put them either whole or scrambled) and so your mixture !
